Quinoa Upma Kozhakattai

Call it fascination or a mere obsession – our love for Quinoa began ever since it was named as a “super food” for its high nutritional profile. Often mistaken for a grain, Quinoa is in fact the seed of a chenopod plant and a cousin to spinach, beets and chard predominantly grown in South America. Quinoa cooks easily and absorbs flavors well.

Quinoa KozhakattaiLike many others on a quinoa spell, we used it generously in salads, appetizers and entrees as a substitute for other grains in our recipes. And then one day, we were inspired to make Quinoa Upma Kozhakattai. What originally started as an outlet to overcome the nostalgia of missing festivals in India landed up being a real treat to the palate. Upma kozhakattai is a steamed dumpling usually prepared with raw rice and served as a snack for breakfast or dinner.

We hope you will enjoy this simple recipe made with quinoa along with a little cracked wheat and a sprinkling of grated coconut and dried red chili. With each bite the fulfilling taste will make you crave for more!

Ingredients (4 servings or 16 kozhakattais)photo 1(1)

  • 1 cup quinoa
  • ½ cup cracked wheat
  • 2 tbsp grated coconut
  • 1 tsp coconut oil
  • ½ tsp mustard seeds
  • ½ tsp urad daal (split black lentils)
  • 1 broken dry red chili
  • 3-4 curry leaves
  • salt to taste

Cook 1 cup of quinoa in 2 cups of boiling water and 1/4 tsp of salt. Heat oil in a pan, add mustard seeds and when the seeds splutter add the urad daal, curry leaves, and dry red chilies. Fry till the daals turn golden. Now add 1 ¼ cup water and bring to boil. Add salt to taste and cracked wheat. Cook for a few minutes, stirring occasionally, until the water is evaporated. Add the cooked quinoa, grated coconut and mix well. This is called upma and can be eaten by itself. To make quinoa upma kozhakattais, let the mix cool for a few minutes. Now take a golf ball size of the upma and shape them into round balls or oblong shapes. Repeat for the rest of the mix.

Variation: You can try the same recipe without cracked wheat.
